Traditional orange cake

This traditional orange cake will become the best company for your morning or afternoon coffee — oh well, all day long, with or without coffee. Use the last oranges of the season to bake this heartwarming delight.

Before you start
Equipment
  • Mixer
  • Two bowls
  • Baking dish
  • Baking sheet or oil for greasing
What you need

Ingredients

  • 1 cup sunflower oil
  • 4 eggs
  • 1 cup sugar
  • 2 cups all-purpose flour
  • 1 orange (juice and zest)
  • 3 tsp baking powder
A slice of portokalopita
How it is made

Method

  1. Beat the oil and sugar

    First beat the sunflower oil with the sugar really well.

  2. Beat the eggs separately

    In a separate bowl beat the eggs really well. Once beaten, add them to the oil and sugar and beat everything together.

  3. Add the orange

    Add the juice and zest from the orange to the mixture and stir.

  4. Add the dry ingredients

    Add the flour and baking powder and stir again.

  5. Into the dish

    Empty the mixture into a baking dish. Line it with a baking sheet, or add some sunflower oil to the bottom and sides if you are not using one.

  6. Bake

    Preheat the oven (fan) to 180°C and bake for 45 minutes. After 30 minutes you can test with a knife to see whether it comes out dry.

Serving suggestion

Serve at room temperature with coffee.
