Stuffed tomatoes and peppers
Spanakorizo is a tasty fasting option that can be served as a main course, or as a side to your meat and fish dishes.
In a pan put the olive oil and fry the onion for about 3 minutes over medium heat. Add the pepper and cook for another 3–4 minutes, then add the spinach to the pan and cook for another 6–8 minutes.
Add the water and let it boil for 10 minutes.
Add the rice, the dill, salt and pepper to taste, and cook for 15 minutes until the rice is cooked and the water is absorbed. If the water is absorbed and the rice is still uncooked, add hot water accordingly.
Remove from the heat and serve, adding lemon juice to taste.
Serve it as a main with feta alongside, or as a side to grilled meat or fish.
